HUMMUS

2 Cups Cooked Chickpeas
1/4 Cup Lemon Juice
1/4 Cup Tahini
1 Tbsp Olive Oil
3-4 Cloves of Garlic
1 Tsp Cumin
Pinch of Salt
2-3 Tbsp Water
2 Roasted Red Peppers (optional)

Place lemon juice and tahini in a food processor and process for 1 minute, scrape from sides and process a further 30 seconds.
Add olive oil, garlic, Cumin and salt, process until combined.
Add chickpeas and process, occasionally scraping the edges.
If using the peppers add them now and process until combined, adding water if necessary.
When all ingredients are combined place into a glass or ceramic bowl. Drizzle some olive oil over the top and sprinkle wirh paprika or sumak.

This makes a lovely filling for wraps along with finely chopped salad.
